Lemon Avocado Alfredo Penne

This simple dinner recipe is a newcomer in the rotation and was a hit with both grown-ups and kids! It features two of my favorite brands - @ancientharvest and @doublebatcheese! 🤩

Recipe: Lemon Avocado Alfredo Penne

Ingredients

  • @ancientharvest Gluten-Free Penne (made with corn, brown rice & quinoa) 🍝

  • Broccoli 🥦

  • Spinach 🥬

  • Pumpkin seeds 🎃

  • Avocado slices 🥑

  • Pea shoots 🌱


For the Alfredo:
Sauté chopped garlic 🧄 with vegan butter 🌱🧈 until the garlic is soft. Add vegan milk 🌱🥛, vegan Parmesan cheese 🌱🧀 (I prefer @doublebatcheese - made from high quality ingredients!), vegan Mozzarella 🌱🧀 (@doublebatcheese again!), a touch of Himalayan Pink Salt 🏔️💕🧂, black pepper 🌶️ 🖤, and an avocado, chopped 🥑 and the juice of half a lemon 🍋. Simmer and whisk until smooth.
